Breadsticks and Pizza Sticks

As you know, I have been experimenting with food lately. I am trying many of the Keto recipes. I have been pleasantly surprised at how well they are turning out and how good they taste. I am learning what I like, what I want to change, and how to make it unique to me.

Today I experimented with what was made to be a pretzel recipe. It came out in no way like pretzels. However, it did turn out to be an excellent recipe for breadsticks and what we are lovingly referring to as "pizza sticks." Miles was determined to call them pizza sticks and is very happy that I agreed it was a good name for them.

Ingredients:

Dough

1 1/2c mozzarella cheese

2tbsp cream cheese

1 egg, beaten

3/4c almond flour

1 1/2tsp garlic powder

1 tsp Italian seasoning

Garlic Topping

3 tbsp butter, melted

1 1/2 tsp garlic powder

1 tsp Italian seasoning

1 tsp parsley

Pizza topping suggestions - optional

Turkey pepperoni

Sausage

Olives

Cheese

Any topping you love!


Temp: 350

Cook Time: 15 minutes

Prep Time: 10 minutes

Total Time: 25 minutes


Directions:

Preheat over to 350. Line baking sheet with parchment paper set aside.

In a glass or microwave-safe bowl combine mozzarella and cream cheese — microwave for 90 seconds, stirring every 30 seconds. Check the mixture after 60 seconds as each microwave varies. Carefully remove and mix in almond flour, spices, and beaten egg. Stir. I used gloves to mix the dough thoroughly. Divide the dough into 4 sections — transfer dough to the baking sheet. I formed sticks, but you can make them any shape you desire. The dough mixture is very sticky! I wet my hands with water to help in the shaping process — brush dough with seasoned butter before going into the oven.

For breadsticks - Cook 15 minutes at 350, remove from oven and brush with additional seasoned butter.

For Pizza Sticks - Cook 8-10 minutes, remove from the oven and add your pizza toppings. Be careful; they're hot! Place back in the oven and cook an additional 5-8 minutes depending on your toppings and the shape (thickness) of your bread. Drizzle with extra seasoned butter once removed from the oven.

These were very quick and easy. Something the kids would love to help you make! They are also VERY filling. Serve with marinara, ranch, seasoned butter, or your favorite dipping sauce. Enjoy!

Air fryer instructions: Make sure to use parchment paper in the bottom. The dough is sticky!

For breadsticks cook on 350. Check after 8 minutes for doneness.

For Pizza Sticks cook on 350 for 5 minutes, add your toppings and cook an additional 3-5 minutes.

*Depending on your desired level of "doneness" and your air fryer, times may vary.
