Pork Rind Crusted Pork Chops

Since I have been eating grain-free, I have missed breading especially panko. Almond flour has been a great help, but it is just not the same. Coconut flour, in my personal opinion, doesn't make a good breading, has an off texture and taste. I am still experimenting with coconut flour, and I am sure I will find a good use for it.

I have never liked pork rinds. I tried them a handful of times and each time was very disappointed and quite frankly, disgusted. Recently I have had friends tell me to try crushed pork rinds as a breading. I was skeptical. However, tonight I took the plunge and used pork rinds as a breading. I was pleasantly surprised! It had good flavor and texture. The crunchiness I have missed was back! I am a believer!

Ingredients:

1lbs meat of your choice - I used thinly sliced pork chops

Avocado oil for frying

1 1/2 cups of original crushed pork rinds

1/4 cup parmesan cheese

2tblsp yellow mustard

1tblsp dijon mustard - I used Grey Poupon

Flour base to taste - I used approximately 2 tablespoons

salt and pepper to taste

Cook Time: 10 minutes or less

Prep Time: 10 minutes

Total Time: 20 minutes

Directions:

Add avocado oil to the frypan and turn on medium-high heat. Crush pork rinds into a coarse texture. Add parmesan and all spices. I put the mixture through a food chopper or processor to mix well and give even texture. Place mixture in a flat bottom work bowl. In a separate work bowl mix the mustards together. Coat meat in mustard and then pork rind crumbs. Make sure all sides are coated well. Transfer meat directly to a preheated pan. Cook on each side 3-5 minutes depending on thickness. Turn and cook an additional 2-4 minutes. Remove from pan and let rest on a wire rack or a paper towel-lined pan.

The plain pork chops were simply seasoned and fried. No breadcrumb mixture used.

This recipe can also be done using the air fryer or oven. Adjust cooking times appropriately.

Air fryer - 370 for 5-7 minutes - flipping halfway through

Oven - 350 for 10 minutes - flipping halfway through
