Chicken, Sausage, and Veggie Sheet Pan Meal
They say that you should eat your colors! Well, this is one of my favorite ways to do so! This easy and healthy sheet pan meal is a crowd-pleaser with little effort and huge taste!
Ingredients:
2lbs boneless, skinless chicken breast - brined is best
1lbs of your favorite fully cooked sausage
1 large zucchini
1 large summer squash
1 large purple onion
1/2 each yellow, green, red, and orange bell peppers
10 whole baby portabella mushrooms
3 tablespoons olive or avocado oil
3 tablespoons of your favorite seasoning or to taste

Cook Time: 20 minutes
Total Time: 30 minutes
Directions:
Rinse and pat dry the vegetables before prepping - cube or slice vegetables into roughly 2” pieces and half the mushrooms. You want everything to be close to the same size so that it will cook evenly. If you brined your chicken, remove from liquid and rinse thoroughly. Pat chicken dry and cut into 2” cubes. Slice sausage into 2” slices. Place everything into a large mixing bowl, add oil and seasoning. Mix well to ensure all vegetables and meat are fully coated. Transfer to a large sheet pan. It is best to have everything in an even layer, but some overlapping is fine.
Cook on 400 for 20 minutes - no stirring necessary. Be careful! The pan is heavy! Serve immediately and enjoy! This easy sheet pan meal can be served on its own or with your favorite bread.
