Sausage and Shrimp with Vegetables
I made this 100% in my GoWise 5.8QT air fryer! It was so easy to do and turned out AMAZING!
This recipe is low carb, high protein, and Keto friendly!
I like my onions and peppers cooked a bit more than what you see. However, they were still fully cooked. Next time I think I will add the onions and peppers first so that they can cook a bit longer.
What I love about recipes like this is you can substitute any ingredient if you do not care for it or have allergies. Get creative and above all cook with the foods you love!
Ingredients:
2 zucchini
2 yellow (summer) squash
1 large onion
1 red bell pepper
1 green bell pepper
4oz (1/2 pack) of mushrooms - I used baby Bellas
12 oz (4) cajun style andouille sausages - sliced
15 medium/large shrimp - peeled and deveined
3tblsp avocado oil
1/2 fresh lime juice
Your Favorite Seasonings - I used Miss Micah’s Kitchen Signature Blend
Temperature: 390
Cooking Time: 20 minutes
Prep Time: 15 minutes
Total Time: 35 minutes
Instructions:
Place prepped veggies in a large mixing bowl. Add avocado oil and seasonings. Mix well. Move vegetables to the air fryer. Cook for 5 minutes and stir. Cook for an additional 5 minutes and stir. Add sliced sausage and stir, cook an additional 5 minutes. While veggies and sausage are cooking, add seasoning to the shrimp. Squeeze the juice from half of the fresh lime to coat thoroughly. Add shrimp to the air fryer DO NOT STIR and cook for 2 minutes. Stir and cook an additional 1-2 minutes. Until the shrimp is cooked through. Steps are shown in the pictures below.
I hope you enjoy this recipe. You can make as much or as little as you want! If cooking a smaller amount, I would cut down on your cooking time. Keep an eye on the veggies and adjust accordingly. Make it your own and share what you changed!
