Zucchini Fries

Zucchini Fries are fast becoming one of my favorite foods! I use them as a side often, but I also enjoy them as a snack or meal.

Ingredients:

2 zucchini - cut into fries or slice using a mandoline - Both examples shown below

Avocado oil - I used a spray - You can use olive, coconut, or other oil

3/4C almond flour

Salt to taste

Temp: 400

Cook Time: 15 minutes

Prep Time: 10 minutes

Total Time: 25 minutes

Directions:

In a bowl with tight-fitting lid mix flour and salt (and/or seasonings). Set aside. In a medium bowl add the zucchini strips and coat with oil. Mix well. You want to make sure the zucchini is well coated on all sides. If you don't have spray use regular oil. Add the zucchini to the flour, shake well. Place in your air fryer basket. Shake every 5 minutes. Salt immediately after removing from the fryer.

Zucchini is best when served immediately.

These go great with nearly any meal or alone as a snack! You can serve with your favorite dip, ranch, garlic aioli, or ketchup.

Tips: Add your favorite seasoning and spices! I like them plain and simple, but also enjoy adding Miss Micah’s Kitchen Flour Base, Italian seasoning, dry mustard, parsley, or anything else you enjoy would be delicious too!
